1 lb macaroni noodles
Willow’s Sweet Smoke BBQ Rub
3 cups whole milk
2 cups heavy cream
1 stick of salted butter
8 oz cream cheese
1-1/2 cups grated Gouda cheese
1-1/2 cups grated smoked white cheddar cheese
1-1/2 cups grated Gruyère cheese
Directions
- Heat your Camp Chef smoker to 250 degrees
- Combine all of the ingredients in a large cast iron skillet. If you do not have one available, use a disposable 9 x 13 aluminum baking pan. Season with Willow Seasonings Sweet Smoke BBQ Rub to your taste. Put the cheese on last and leave about 3/4 cups for later in the cooking process.
- Place pan on smoker for approximately 2 hours. Stir every 30 minutes. With about 15-20 minutes left in the cook time sprinkle the remainder of the cheese over the dish. You can sprinkle more Sweet Smoke on at this time if you want.
- Variations: add some leftover smoked brisket or bacon to the dish and let cook the entire time.
