Why is this smoked mac and cheese recipe so amazing?

  • DECADENT. Indulgent. Creamy. Perfect.
  • The use of Willow Seasonings Sweet Smoke seasoning is the key to this one.  The extra flavor that it adds really makes this a unique and flavorful dish.
  • Fast smoke time – After whipping up the ingredients, it takes just around 2 hours to smoke, depending on how much of that great smoke flavor that you want in your mac.
  • Start in the kitchen mixing the noodles and cheese sauce, then finish in the smoker.
  • SO EASY FOR BEGINNERS, and the richness of the white cheddar cheese combined with the Gruyere cheese will give your taste-buds a tang they will not easily forget.

Ingredients

  • 1 lb macaroni noodles

  • Willow’s Sweet Smoke BBQ Rub

  • 3 cups whole milk

  • 2 cups heavy cream

  • 1 stick of salted butter

  • 8 oz cream cheese

  • 1-1/2 cups grated Gouda cheese

  • 1-1/2 cups grated smoked white cheddar cheese

  • 1-1/2 cups grated Gruyère cheese

Directions

  • Heat your Camp Chef smoker to 250 degrees
  • Combine all of the ingredients in a large cast iron skillet. If you do not have one available, use a disposable 9 x 13 aluminum baking pan. Season with Willow Seasonings Sweet Smoke BBQ Rub to your taste. Put the cheese on last and leave about 3/4 cups for later in the cooking process.
  • Place pan on smoker for approximately 2 hours. Stir every 30 minutes. With about 15-20 minutes left in the cook time sprinkle the remainder of the cheese over the dish. You can sprinkle more Sweet Smoke on at this time if you want.
  • Variations: add some leftover smoked brisket or bacon to the dish and let cook the entire time.
  • ENJOY!!!
