This Shrimp Linguine with Zucchini, Chili Peppers,  and Tomatoes is the ultimate summer pasta! Pretty enough for a special occasion, easy enough for weeknight dinner. 

You guys, this is my absolute favorite pasta to make during the summer. I’ve been making it since I was a teenager. It is so easy. So flavorful and absolutely perfect for a summer dinner out on the patio.

This Shrimp Linguine with Zucchini and Chili Peppers is the ultimate summer pasta! Pretty enough for a special occasion, easy enough for weeknight dinner. 

Ingredients

  • 2 - Zucchini (Cut into half-moon slices)

  • 2 - Small Red Chili Peppers (sliced)

  • ½ Stick Unsalted Butter

  • 2 Cloves Garlic (finely minced or pressed) (may use garlic powder)

  • 1 Pound Shrimp 21 ct.

  • 1 Cup Cherry Tomatoes, sliced in halves

  • 8 ounces uncooked Spaghetti

  • ¼ cup Freshly Grated Parmesan Cheese

  • 1 to 2 Tbsp Feisty Lime Seasoning

Directions

  • Cook spaghetti to al dente
  • In a skillet heat olive oil and sauté the zucchini and red chili peppers, dust with Feisty Lime Seasoning while cooking. When done remove and set aside.
  • Melt butter in a small pot and add garlic or garlic powder to make garlic butter.
  • Coat shrimp with Feisty Lime and sauté in skillet until done (internal temp of 145 degrees). Once done add the zucchini and red chili peppers to the skillet and mix together.
  • Add the spaghetti, sliced Cherry Tomatoes, and garlic butter to the shrimp mixture and toss together.
  • Once the dish is plated you can top with freshly grated parmesan cheese.
