Making homemade Spanish, or  Mexican Rice,  is super easy and the taste, texture, and ingredients far exceed anything you’ll find in a box. Spanish rice and Mexican rice are basically used interchangeably here in the states. Both restaurants and home cooks have put their unique twists on this recipe, and you’ll find there are a few ingredients and cooking tips I use to make this not only delicious, but unique.  The key ingredient is our Feisty Lime seasonings, from my  own Willow Seasonings and Blends.  Check it out, it will not disappoint.

Mexican rice with a Feisty Twist

Ingredients

  • 1 medium red onion - diced

  • 2 medium bell peppers- diced

  • 2 Cloves garlic - minced

  • 1 10 ounce can Rotel Tomatoes- drained

  • 1 4 ounce can Hot Hatch Diced Green Chili's- drained

  • 2 cups uncooked instant rice

  • 2 cups chicken stock

  • 1 to 2 TBSP Willow's Feisty Lime Seasoning

  • Olive oil

Directions

  • Heat a skillet and coat with olive oil
  • Had onions to skillet and sauté until onions begin to turn translucent
  • Add bell peppers to the skillet and cook for about 5 minutes.
  • Add garlic and sauté until fragrant
  • Add uncooked rice and cook until rice begins to brown
  • Stir in can of rotel tomatoes and cook for approximately 1 minute
  • Stir in can of Hatch green chilies and cook for approximately 1 minute
  • Add Feisty Lime seasoning and stir into the mixture
  • Add chicken stock and bring to a boil. Once it begins to boil cover with a lid and reduce heat to low. Cook until all liquid has been absorbed. Shake skillet occasionally to prevent burning and sticking.
  • Serve as a side with your favorite Mexican dish and ENJOY!!!
